Smoky BBQ Jackfruit Pizza (Vegan & Gluten-free!)

Jackfruit; the most versatile fruit ever!
Delicious as a vegan meat substitute and great on its own, jackfruit can be utilised in a variety of dishes and when shredded, has a similar texture to pulled pork (weird right?!)

Recipe
Makes: 2 medium pizzas or one large pizza.
Ingredients:
Crust:
Pizza Sauce:
- ½ cup of barbecue sauce
- 1 teaspoon of basil
- 1 teaspoon of oregano
- 1 teaspoon of minced garlic
- 1 teaspoon of apple cider vinegar
- 1 tablespoon of melted vegan margarine
Smoky Barbecue Jackfruit:
- ½ cup of barbecue sauce
- 1 teaspoon of minced garlic
- 1 teaspoon of apple cider vinegar
- 1 teaspoon of smoked paprika
- ½ teaspoon of chilli
- ½ teaspoon of salt
- 1 can of jackfruit in water or brine
- 2 tablespoons of oil
Other:
- 1 cup of vegan cheese
- 1 red onion
- 1 red capsicum
- Drizzle of vegan aioli
Method:
- Make the gluten-free & vegan pizza crust as per the instructions in the recipe.
- While the crust is pre-cooking, make the pizza sauce by combining all sauce ingredients in a bowl, set aside.
- Next, rinse & drain canned jackfruit. 'Shred' the jackfruit by pulling the stringy parts away from the core (the triangular part) and set them aside in a bowl. Discard the core & any seeds.
- Make the marinade for the jackfruit by combining the minced garlic, apple cider vinegar, smoked paprika, chilli & salt together in a bowl & mix well. Add the marinade to the shredded jackfruit and stir until all the jackfruit is evenly coated.
- Heat 2 tablespoons of oil in a pan on medium-high heat and fry the jackfruit for 3 minutes, stirring constantly. Remove from heat and set aside.
- Dice the capsicum and red onion.
- Remove the pizza crust after 20 minutes and increase the heat to 210 degrees celsius.
- Coat the crust generously with the pizza sauce. Top with jackfruit, vegan cheese, onion & capsicum. Drizzle with vegan garlic aioli.
- Bake for an additional 20 - 23 minutes, remove from the oven when the crust is crispy and toppings are hot.
- Cool for 5 minutes, then let your taste buds be overwhelmed with crispy, delicious, barbecue-y PERFECTION!
